Meal Planning Monday

Wow – it feels like I haven’t planned meals in ages!!  Crashing at my parent’s house meant I didn’t have to cook dinners for a few weeks, and it was glorious.  But now I’m back in my house (with unfinished floors) and back to planning our meals.  Here’s what’s on the menu for this week in our house:

Roasted Chicken, mashed potatoes & roasted brussel sprouts.  Perfect for a cold day!  I love making roaster chickens so I can make chicken broth (and I make sure I use the extra meat for a recipe the next day – which this week will be…

Thai Crunch Chicken Salad (from How Sweet Eats) – we love this!!  It’s time intensive, but worth it.  I’m doing it on a day that my husband’s around to watch Isaac while I make it.  Delish!

Thai Crunch Chicken Salad I

Loaded Quesadillas (from its all delicious): a nice & easy weeknight dish.  I add avocados too!


Spaghetti with meat sauce (Caesar Salad on the side): one of our go-to easy peasy dinners.  I make my own sauce and add browned ground beef to it.  Add a big salad on the side so you don’t just load up on carbs!

  1. That Thai Chicken Salad looks amazing! I’m definitely going to try that. I would add avocado the quesadilla too, but I put avocado on pretty much everything I can =) I’m actually doing Pinterest Recipe Week this week, so everything I cook is going to be something I pinned that we’ve never tried before.
